Bikaner is a city that knows how to use heat. Not just the desert kind โ the masala kind. The kind that builds slowly, stays put, and makes you very glad you reached in for another handful.
The namkeen tradition of Bikaner is centuries old. The city's dry Thar climate and its position on ancient spice trade routes made it a natural hub for shelf-stable, intensely flavoured snacks. Jor Garam โ loosely translated as "hot pressure" โ is among its most beloved: tiny crisp puffs of fried gram flour, tossed in a blend of red chilli, dry mango powder, and rock salt that sharpens with every bite.
Our Bikaneri Jor Garam is made by traditional namkeen artisans in Bikaner, using the recipe that hasn't needed improving. The spice mix is applied post-fry โ which means you get the full hit of chilli and amchur without any burning in the oil. The result is bright, sharp, and deeply moreish.ย No palm oil. The Bikaner way: with chai, around sunset, with nowhere urgent to be. Also excellent stirred into plain puffed rice for instant masala muri, or spooned over dahi for a spiced crunch that does something interesting to yoghurt.
