Why We Exist
Ever wondered why the bhujia you buy today tastes nothing like the bhujia your Marwari neighbour's mother used to make?
Why something as simple as hing, one ingredient, one purpose, gets replaced by a flavour that sounds like a chemistry experiment?
I grew up surrounded by people from Rajasthan, UP, Punjab, Bengal. Every home smelled different. Every evening had its own chakhna, its own chai, its own argument. Food was never just food. It was the reason people stayed a little longer.
Then I grew up. And the food didn't.
The bhujia started tasting the same everywhere. The chiwda lost its mustard. The sev forgot where it came from. Somewhere between scale and shelf life, the real recipes got quietly replaced — and nobody said anything.
I said something.
Patang exists because good food deserves a real address. Because hing should be hing. Because the bhujia from Bikaner should taste like it was made in Bikaner, because it was. Because your evening chakhna deserves the same care as anything else on your table.
