Bhakadwadi (also called Bhakarwadi or Bakarwadi) is Pune's gift to the Indian snack cabinet — and Pune, being exacting about such things, has made it difficult to get right. The spiral shape isn't decoration; it's structure. A flat sheet of spiced gram flour dough, filled with a coconut and sesame masala, rolled tight, sliced, and fried until each ring achieves the precise balance of crunch and chew that separates a great Bhakadwadi from a merely acceptable one. Chitale Bandhu made it famous. Pune made it an identity.

Our Puneri Bhakadwadi is made in Pune by makers who understand that the sweet-spice-tang ratio is everything here. The outer shell is crisp without being brittle. The filling: coconut, sesame, coriander, aniseed, is layered rather than muddled, so each bite releases in sequence rather than all at once. No palm oil. Is Pune's Bhakarwadi different from the Gujarati version?
Yes. The Pune (Puneri) version is spicier and more tangy. The Gujarati Bakarwadi tends to be sweeter and softer. Ours is made in Pune to the Puneri recipe, it has a distinct chilli and tamarind edge that the Gujarati version doesn't.
