The answer turned out to be something worth saying out loud. This is that answer.

Every Patang product comes from a single region. We do not move recipes to cheaper kitchens. We go to the recipe, wherever it lives.

Real spices. Not synthetic.

No flavour enhancers. No artificial preservatives. No industrial seasoning blends. If you cannot find it in a kitchen, it is not in our products.

Small batches. By design.

We will never scale a kitchen past its craft. When demand grows, we find a second kitchen, never compromise the first.

Our kitchens are partners, not vendors. We pay above market, commit to consistent volumes, and show up in person. Their success is ours.

Use artificial flavouring of any kind

Not MSG, not synthetic spice extracts, not "natural identical" flavours. If it is not real, it is not Patang.

Move a recipe to a cheaper kitchen

A recipe that belongs to Bikaner stays in Bikaner. Cost optimisation does not apply to craft.

Scale a kitchen past its quality threshold

When demand exceeds what a kitchen can make well, we find another kitchen — not a bigger machine.

Ship a batch that hasn't been tasted and approved
